If you’re looking for a healthy grain that’s gluten free and full of nutrients, you’ve found it!
Although it hails from South America, used extensively by the Aztecs, it’s becoming popular around the world for its health benefits and nutrient values. Plus it helps with digestion. That’s why we add a generous amount of amaranth to our gluten-free cornbread.
You may be as surprised as I was to learn that amaranth provides 26 grams of protein per cup, which compares very favorably with millet (22 grams), sorghum (22), corn (9) and rice (11). So it’s a winner, for sure.
It offers plenty of fat, which is a big plus, providing 13 grams compared to millet (8), sorghum (6), corn and rice (4 each). You can see why we love amaranth.
And, to wrap up, its fiber is 13 grams, right near the top, compared to millet (17), sorghum (12), corn (5) and rice (7).
